A low-fat, high-protein, high-fiber chili that uses lean turkey meat instead of beef. This recipe is flavorful, spicy, too. I give it three chili peppers for "heat"!
  • 2 large onions
  • 3 peppers
  • 2 ½ lbs ground lowfat turkey
  • 2 28-oz cans crushed tomatoes in puree
  • 2 16-oz cans pinto beans
  • 1 16-oz can kidney beans
  • 2 fresh hot peppers (Anaheim, cubano, jalapeno)
  • ¼ cup minced garlic
  • 1 bunch parsley or cilantro
  • ~ ⅓ cup vegetable oil
  • Seasoning for meat
  • ½ cup “regular” chili powder
  • 3 tablespoons chipotle chili or “hot” chili powder
  • 1 ½ tablespoon cumin
  • 1 tablespoon fresh ground black pepper
  • Seasoning for crockpot mix
  • 2 tablespoons brown sugar
  • 1 teaspoon ginger
  • ½ teaspoon allspice
  1. Slice onions and peppers in bite-size pieces (not minced).
  2. Prepare the meat seasoning mix and dice the hot peppers (flesh only, no seeds). Mince garlic cloves if using fresh garlic.
  3. Sautee onions and peppers in 2 tblspn. oil. When onions are translucent and peppers are soft, add to tomatoes in crockpot and turn crockpot on.
  4. Drain and rinse beans and add to crockpot (can be done while meat is browning)
  5. Sautee half of garlic and hot pepper in 2 tblspn oil, then add half the turkey meat, crumbled, and sprinkle half of meat seasoning on the meat. Brown the meat, mixing well with the seasoning, hot peppers, and garlic, and breaking up large lumps of meat. When browned, add to the crockpot. Repeat for remainder of garlic, hot pepper and turkey meat.
  6. Cut parsley/cilantro leaves from stalks and chop leaves. Add leaves and seasoning for crockpot mix to the crockpot.
  7. Stir well. Cook on high for 4-6 hours or low for 8 hours.
