Summer Salad the Edamame way

- 1 lb of Edamame beans shelled (look in the organic food section)
- 1 ½ cups of frozen corn
- 1 can of drained black beans
- 1 can of drained garbanzo beans
- Diced red peppers if desired, along with cherry tomatoes, onion
- ¼ cup olive oil
- ½ or more of a lemon, squeezed
- ½ TBS of Dijon or other brown mustard
- Place salad ingredients in a large bowl.
- Whip up the dressing, pour it over the salad mixture, and toss.
