Summer Salad the Edamame way

  • 1 lb of Edamame beans shelled (look in the organic food section)
  • 1 ½ cups of frozen corn
  • 1 can of drained black beans
  • 1 can of drained garbanzo beans
  • Diced red peppers if desired, along with cherry tomatoes, onion
  • ¼ cup olive oil
  • ½ or more of a lemon, squeezed
  • ½ TBS of Dijon or other brown mustard
  1. Place salad ingredients in a large bowl.
  2. Whip up the dressing, pour it over the salad mixture, and toss.
